- 1 2 cup 125ml cranberry juice
- 1 cinnamon quill
- 2 teaspoons arrowroot
- 2 tablespoons chambord or brandy

- combine the berries sugar juice and cinnamon in a saucepan and bring to the boil stirring over medium heat reduce heat to low and simmer stirring for 5 minutes or until berries start to burst
- strain berry mix through a sieve into a bowl pressing down on solids to extract all the juice before discarding return the liquid to the pan dissolve arrowroot in a little cold water add some berry juice then return arrowroot mixture to the pan and stir over low heat for 1 2 minutes until thickened stir in the chambord or brandy then cool the sauce will keep refrigerated for up to 1 week
