The ingredient of Raspberry Ice Cream Sandwiches
- 1l vanilla ice cream
- 2 teaspoons pure icing sugar sifted
- 125g fresh raspberries
- 75g cadbury melts real white chocolate finely chopped
- 450g pkt butter cake ends trimmed cut into 5mm thick slices
- 100g cadbury melts real white chocolate extra melted
- raspberries extra to serve

- line the base and 2 long sides of a 26 x 16cm base measurement slice pan with baking paper allowing the sides to overhang place ice cream in a large bowl set aside for 20 minutes to soften slightly
- meanwhile combine icing sugar and half the raspberries in a bowl use a fork to mash until smooth fold in remaining raspberries
- stir the chopped chocolate and raspberry mixture into ice cream until just combined spoon into lined pan cover and place in the freezer for 8 hours or overnight or until firm
- use a 6cm round cutter to cut 16 discs from the cake and 8 discs from the ice cream place 8 cake discs on a lined baking tray top with ice cream discs then remaining cake discs press gently freeze for 1 hour or until firm
- spoon melted chocolate over ice cream sandwiches and spread top with extra raspberries freeze for 5 minutes or until set
