The ingredient of Potato And Caramelised Onion Tart
- 2 sheets ready rolled shortcrust pastry thawed and cut in half
- 20g butter
- 3 onions sliced
- 1 2 teaspoon brown sugar
- 3 small potatoes thinly sliced
- 1 teaspoon fresh thyme leaves
- salt and cracked black pepper
- 1 4 cup 20g finely grated parmesan
- 4 eggs lightly beaten
- 1 2 cup 125mls cream

- grease four 12cm diameter removable base tart pans with oil spray and line with the pastry trim off excess pastry and discard refrigerate pans for 20 minutes
- meanwhile heat the butter in a large non stick frying pan over medium heat add the onion and cook for 15 minutes add the brown sugar and potatoes and cook for a further 10 minutes until the mixture is caramelised stir in thyme salt and pepper and set aside to cool slightly
- preheat oven to 180u00b0c place parmesan egg and cream in a bowl and whisk to combine divide the onion mixture between the chilled tart pans then pour over the egg mixture bake for 20 minutes or until set and golden on top serve warm or at room temperature
