The ingredient of Banana Cake
- 125g butter chopped at room temperature
- 1 cup brown sugar
- 2 eggs
- 1 1 2 cups self raising flour
- 1 2 teaspoon bicarbonate of soda
- 3 bananas mashed sprinkled with 1 2 teaspoons lemon juice
- 1 4 cup milk or water
- 125g cream cheese chopped
- 2 cups icing sugar sifted
- 1 teaspoon lemon juice
- few drops vanilla essence
The Instruction of banana cake
- preheat oven to moderate 180c lightly grease and line a deep round 20cm cake pan
- in a medium bowl using an electric mixer beat butter and sugar together until light and fluffy add eggs one at a time beating well after each addition
- sift flour and soda together lightly fold into cream mixture followed by banana with juice and milk until combined pour into pan
- bake for 40 45 minutes until cooked when tested with a skewer cool in pan for 5 minutes before transferring to a wire rack to cool completely
- to make the icing in a medium mixing bowl using an electric mixer beat cream cheese until smooth gradually add icing sugar juice and vanilla beating until smooth spread icing on cooled cake to serve
