- 1 litre massel salt reduced chicken style liquid stock
- 1 cup instant polenta
- 1 teaspoon dried rosemary
- 1 tablespoon finely grated lemon rind
- 3 4 cup finely grated parmesan
- olive oil cooking spray
- 1 tablespoon roughly chopped fresh chives
- 150g mild blue cheese chopped
- 1 4 cup finely grated parmesan
- 1 cup thickened cream
The Instruction of crispy polenta with blue cheese sauce
- grease a 3cm deep 16cm x 26cm base slice pan line base and sides with baking paper extending paper 3cm above edges
- place chicken stock in a saucepan over medium high heat bring to the boil gradually whisk in polenta stir constantly for 2 minutes or until mixture starts to thicken add rosemary and lemon rind stir to combine reduce heat to low cook stirring often for 3 to 5 minutes or until polenta is thick
- add parmesan season with salt and pepper stir to combine pour into prepared pan stand for 10 minutes refrigerate for 2 to 3 hours or until cold and set see note
- preheat oven to 200c 180c fan forced line a baking tray with baking paper remove polenta from pan cut in half lengthways cut each half into 6 fingers place polenta in a single layer on prepared tray spray liberally with oil bake for 20 minutes or until golden and crisp
- meanwhile make blue cheese sauce place blue cheese parmesan and cream in a small saucepan over medium heat stir for 5 minutes or until cheese has melted and sauce is smooth
- place polenta on a serving platter drizzle with sauce sprinkle with chives serve
