  • 2 1 2 cups 400g wholemeal self raising flour
  • 1 cup 220g brown sugar
  • 1 teaspoon mixed spice
  • 1 2 teaspoon bicarbonate of soda
  • 3 cups grated gold sweet potato
  • 16 fresh dates seeded chopped about 1 2 cup chopped dates
  • 1 cup 250ml vegetable oil
  • 3 coles australian free range eggs
  • 2 teaspoon finely grated orange rind
  • 125g cream cheese
  • 50g butter softened
  • 1 2 cup 80g icing sugar mixture
  • orange zest to serve

The Instruction of sweet potato and date cake

  • preheat oven to 180c grease and line a 20cm round cake pan
  • combine flour sugar mixed spice bicarbonate of soda sweet potato and date in a large bowl make a well in the centre combine oil eggs and orange rind in a bowl pour into flour mixture stir until well combined pour mixture into the prepared pan
  • bake for 1 hour or until a skewer inserted in centre comes out clean set aside in pan for 5 mins before turning onto a wire rack to cool completely
  • use an electric mixer to beat cream cheese butter and icing sugar in a bowl until light and fluffy spread over top of the cake sprinkle with orange zest
