  • 1 cup 70g fresh breadcrumbs
  • 1 3 cup 55g diced dried apricots
  • 1 3 cup 55g pistachio kernels roughly chopped
  • 1 orange rind finely grated
  • 1 egg
  • 1 8kg pork loin
  • 1 tablespoon olive oil
  • 1 tablespoon sea salt
  • 1kg kent jap pumpkin unpeeled deseeded cut into chunks
  • 4 red apples quartered cored

  • preheat oven to 230u00b0c combine 1 cup 70g fresh breadcrumbs 1 3 cup 55g diced dried apricots 1 3 cup 55g pistachio kernels roughly chopped 1 orange rind finely grated and 1 egg
  • place a 1 8kg pork loin rind side down spread filling in centre roll up and tie at regular intervals with string place in a pan and drizzle with 1 tablespoon olive oil then rub in 1 tablespoon sea salt roast for 30 minutes
  • reduce the oven to 180u00b0c place 1kg kent jap pumpkin unpeeled deseeded cut into chunks and 4 red apples quartered cored around the pork roast for a further 1 hour or until the juices run clear rest for 10 minutes before serving
