Baby Brussels Sprouts With Pancetta Crumbs And Hazelnuts


Mild-flavoured and slightly sweet, these smaller versions of brussels sprouts are miniature members of the cabbage family and one of the healthiest vegies.

The ingredient of Baby Brussels Sprouts With Pancetta Crumbs And Hazelnuts

  • 2 tablespoons olive oil
  • 3 slices pancetta coarsely chopped
  • 120g 2 cups fresh breadcrumbs
  • 2 garlic cloves finely chopped
  • 600g baby brussels sprouts
  • 10g butter chopped
  • 2 tablespoons roasted hazelnuts

  • heat the oil in a large frying pan over medium heat add the pancetta and breadcrumbs cook stirring for 3 minutes add the garlic and cook stirring for 3 minutes or until breadcrumbs are golden
  • cook the brussels sprouts in a large steamer over a saucepan of simmering water for 8 minutes or until bright green and tender crisp
  • add the brussels sprouts butter and hazelnuts to the frying pan season with salt and pepper toss until the butter melts and the mixture is well combined
