Greek Style Lamb Shanks With Lemon And Fetta


A Greek-inspired slow cooker classic that will satisfy the whole family with leftovers to spare.

  • 2 tablespoons extra virgin olive oil
  • 1 brown onion chopped
  • 6 french trimmed lamb shanks
  • 700g bottle tomato passata
  • 1 cup massel beef stock
  • 1 4 cup lemon juice
  • 3 garlic cloves finely chopped
  • 1 tablespoon caster sugar
  • 3 large sprigs fresh thyme
  • 1 tablespoon dried oregano
  • 750g chat potatoes
  • 1 tablespoon finely grated lemon rind
  • 2 3 cup lemon juice extra
  • 1 3 cup pitted kalamata olives
  • 100g greek style fetta crumbled
  • salad to serve

  • heat 1 2 the oil in a large frying pan over medium heat add onion cook stirring for 5 minutes or until softened transfer to slow cooker
  • increase heat to medium high cook lamb in 2 batches for 3 to 4 minutes or until browned all over add to slow cooker add passata stock lemon juice garlic sugar thyme and oregano season cover cook on high for 4 hours or low for 8 hours
  • place potatoes in a large saucepan of water over high heat cover bring to the boil boil for 6 to 8 minutes or until tender drain
  • transfer shanks to a heatproof dish add rind and extra juice to slow cooker season stir to combine return remaining shanks to slow cooker stir in olives
  • cut potatoes in half drizzle with remaining oil sprinkle lamb shanks and sauce with fetta serve with potatoes and salad
