Vovolicious No Bake Cake


An easy, cheats cake using an Australian classic biscuit - the Iced VoVo. Be sure to start this recipe a day ahead as it will need to chill overnight.

The ingredient of Vovolicious No Bake Cake

  • 300ml double thick cream
  • 250ml 1 cup thickened cream
  • 80ml 1 3 cup malibu rum
  • 210g pkt arnotts iced vovo biscuits
  • 1 tablespoon desiccated coconut
  • 50g white chocolate melts melted
  • 2 tablespoons coconut flakes
  • 100g fresh berry farm boysenberries in sauce crushed

The Instruction of vovolicious no bake cake

  • use a balloon whisk to whisk the creams in a large bowl until almost firm peaks be careful not to overbeat
  • place the malibu in a shallow dish dip 1 biscuit in the liqueur for about 2 seconds spread with 2 tsp of the cream dip another biscuit in the liqueur and place on top of the cream biscuit then spread with another 2 tsp of the cream repeat with the remaining biscuits liqueur and cream to form a loaf and place on a serving plate
  • spread the remaining cream over the loaf to cover sprinkle the top with the desiccated coconut loosely cover with plastic wrap place in the fridge for at least 5 hours or overnight to set
  • line a tray with baking paper spoon a small dollop of the melted white chocolate onto the tray working quickly place the back of a teaspoon onto the dollop of chocolate and use 1 swiping motion to spread the chocolate sprinkle with the coconut flakes place over a rolling pin to set repeat with the remaining white chocolate and coconut flakes
  • to serve remove the plastic wrap drizzle the boysenberry sauce over the loaf and decorate with the chocolate and coconut shards
