- 1 cup caster sugar
- 1 cup shredded coconut
- 125g butter melted
- 1 cup cream
- 3 4 cup milk
- 1 tablespoons grated lemon rind
- 1 4 cup lemon juice

- preheat oven to 180c grease 25cm pie dish
- whisk eggs in bowl add flour and remaining ingredients until well combined pour mixture into dish
- bake in moderate oven for about 45 mins or until browned and set dust with sifted icing sugar
