Poached Pears With Ice Cream, Praline And Chocolate Sauce

  • 6 small firm pears such as corella see note
  • 1 lemon halved
  • 1 cup 220g caster sugar
  • 1 vanilla bean split seeds scraped
  • 100g dark chocolate chopped
  • 200ml thickened cream
  • vanilla bean ice cream to serve
  • 200g caster sugar
  • 50g flaked almonds

  • for the almond praline lightly grease a foil lined baking tray place sugar and 2 tablespoons water in a pan over low heat stirring to dissolve the sugar increase heat to medium and cook without stirring for 5 6 minutes until golden remove from heat and add almonds swirling to coat in the caramel then quickly and carefully pour onto the tray set aside at room temperature until set then roughly crush into small pieces with a rolling pin set aside
  • peel the pears and halve then rub flesh with the cut side of the lemon place the sugar and vanilla pod and seeds in a saucepan with 2 cups 500ml water stir over low heat to dissolve the sugar then add the pear and bring to a simmer over medium heat reduce the heat to medium low and cover the surface closely with a piece of baking paper cook for 10 12 minutes until pear halves have just softened but still hold their shape the time will depend on the ripeness of the pears remove from heat and allow fruit to cool slightly in the syrup
  • meanwhile place chocolate and thickened cream in a heatproof bowl set over a pan of gently simmering water dont let the bowl touch the water stir occasionally until melted and smooth remove from heat and set aside
  • to serve arrange pear halves in serving bowls then top with scoops of vanilla bean ice cream drizzle with chocolate sauce and sprinkle over the crushed praline serve immediately
